Coconut Beef Curry

Tender beef simmered in a rich coconut curry sauce with potatoes and carrots, a hearty and aromatic dish from Sri Lankan and Caribbean cuisines.

Ingredients

  • 1 lb (450g) beef, cut into bite-sized pieces
  • 2 tablespoon coconut oil
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1- inch piece of ginger, grated
  • 2 teaspoon curry powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1 can (14 oz / 400ml ) coconut milk
  • 2 potatoes, peeled and diced
  • 2 carrots, peeled and sliced
  • Salt and pepper to taste
  • Fresh cilantro leaves for garnish

Instructions

  • Prepare the Beef: Season the beef pieces with salt and pepper. In a large pot or Dutch oven, heat the coconut oil over medium-high heat. Add the beef and sear until browned on all sides. Remove the beef from the pot and set aside.
  • Saute Aromatics: In the same pot, add the chopped onion, minced garlic, and grated ginger. Saute until fragrant and translucent, about 3-4 minutes.
  • Add Spices: Stir in the curry powder, turmeric powder, ground coriander, and ground cumin. Cook for another minute until the spices are toasted and aromatic.
  • Simmer with Coconut Milk: Return the seared beef to the pot. Pour in the coconut milk and stir to combine. Bring the mixture to a simmer, then reduce the heat to low and cover. Let the curry simmer gently for about 1 to 1.5 hours, or until the beef is tender and cooked through, stirring occasionally.
  • Add Vegetables: Once the beef is tender, add the diced potatoes and sliced carrots to the pot. Stir to combine, then cover and continue to simmer for an additional 15-20 minutes, or until the vegetables are tender and cooked through.
  • Adjust Seasoning: Taste the curry and adjust the seasoning with salt and pepper as needed.
  • Serve: Once the beef and vegetables are cooked to perfection, remove the pot from the heat. Garnish the coconut beef curry with fresh cilantro leaves for a burst of freshness. Serve hot with steamed rice or crusty bread to soak up the delicious sauce.
