Thai Green Curry

A classicThai dish featuring a creamy coconut milk base, green curry paste, vegetables,and your choice of protein, such as chicken or tofu.

Ingredients

  • Green curry paste (store-bought or homemade)
  • Coconut milk
  • Chicken, tofu, shrimp, or vegetables (such as bell peppers, eggplant, and bamboo shoots)
  • Thai basil leaves
  • Fish sauce
  • Palm sugar or brown sugar
  • Kaffir lime leaves
  • Cooking oil
  • Optional: Thai bird's eye chilies for extra heat

Instructions

Preparation:

  • Prepare the Ingredients: Slice the chicken, tofu, or vegetables into bite-sized pieces. If using shrimp, peel and devein them. Chop the Thai basil leaves and kaffir lime leaves. Set aside.

Cooking the Curry:

  • Heat cooking oil in a large skillet or wok over medium heat.
  • Add 2-3 tablespoons of green curry paste to the hot oil and stir-fry for 1-2 minutes until fragrant.
  • Pour in about half of the coconut milk (the thick, creamy part) and stir to combine with the curry paste.
  • Add the chicken, tofu, or vegetables to the skillet and cook until they are partially cooked, about 5-7 minutes.
  • Pour in the remaining coconut milk and bring the curry to a gentle simmer.
  • Season the curry with fish sauce and palm sugar or brown sugar to taste. Adjust the seasoning according to your preference for sweetness and saltiness.
  • Add the chopped kaffir lime leaves and Thai basil leaves to the curry. If desired, add Thai bird's eye chilies for extra heat.
  • Simmer the curry for another 5-7 minutes until the protein is fully cooked and the vegetables are tender but still crisp.

Serving:

  • Once the curry is cooked to perfection, remove it from the heat.
  • Serve the Thai Green Curry hot over steamed jasmine rice or noodles.
  • Garnish with additional Thai basil leaves and thinly sliced red chili peppers for color and added flavor.

Notes

You can adjust the consistency of the curry by adding more or less coconut milk. For a thicker curry, use less coconut milk. For a thinner curry, use more coconut milk or add a splash of water or chicken broth.
